Put lit candles around the room.  Chill the wine.  Turn the music down really low.  Send the kids to grandmas and prepare an evening of simple but elegant pleasures for you and your loved one.   This is your night.

One table for two
Clean white tablecloth
Pair of crystal candleholders
Pair of red, strawberry or cinnamon scented candles
Wine glasses
Ice bucket with ice
Your favourite wine
Your favourite music on the stereo

Chef's Salad

1 small head iceburg lettuce torn into bite-sized pieces
1 cucumber peeled, seeded and diced
1 medium carrot peeled and cut into thin coins
1 stalk of celery sliced thinly

Dressing:
1 teaspoon of sugar
1 teaspoon of oil
1 teaspoon of vinegar
Juice and zest from one lemon

Toss the veggies together in a nice bowl and refrigerate.  In a small microwave bowl combine all the dressing ingredients.  Microwave on high for 30 seconds.  Stir.  If sugar is not all melted, microwave for an additional 20 seconds.  Mix well.
Set in the frig to cool.   Just befor serving, mix the dressing well and drizzle over the salad.  Toss and serve.

Tofu in Wine with Veggies

2 lbs of firm tofu that has been frozen and thawed
A Bit of oil
1 cup of cleaned baby carrots (you can buy them already cleaned and bagged)
4 red potatoes scrubbed and cut into wedges (skin left on)
1 orange sliced thinly
1 tablespoon of frozen orange juice concentrate
2 cups of white house wine or cooking wine

That the tofu and press to remove as much moisture as possible.  Slice in 1" slices about 1/2" thick. Put about 2 teaspoons of oil in a non-stick skillet over medium heat.  Brown the tofu strips well on both sides.  Remmove from pan.
In a roasting pan or casserole lay the thinly sliced orange slices. Set the tofu strips on top of the slices.  Nestle the carrots and potatoes around the tofu.  Mix the frozen orange with the wine and pour over the tofu.  Cook uncovered in a slow oven - about 300 degrees F - until the vegetables are crisp tender.  About 30 minutes or so.

To serve:
Arrange tofu and vegetables on a platter.  Discard the orange slices.
 
 

Strawberry Delights

2 pints of firm strawberries with hulls still on

Wash the strawberries well and drain dry.  Do not remove stems.
Arrange on a fancy plate.  Taking turns dipping in chocolate and feeding each other.

Dipping Chocolate

1/2 pound of chocolate.
Pinch of cinnamom
1 to 2 teaspoons salad oil

In 2-cup glass container, melt 1/2 pound chocolate on High until shiny; stir until smooth.  Stir in 1 to 2 teaspoons salad oil.

Pour into a fondue pot and set it on low if electric.  Dip and enjoy.
