This is a microwave recipe
Truffles
Ingredients
one 11 and a 1/2 ounce package milk chocolate or dark chocolate pieces
6 tablespoons butter, cut into 4 pieces
3 tablespoons heavy cream
1 1/2 tablespoons instant coffee powder (flavoured ones are good)
Good stuff to roll them in - cocoa, sugar, chopped nuts, chocolate sprinkles etc.In 2 quart glass container, microwave the chocolate, butter, cream and instant coffee on high 1 to 1 1/2 minutes or until almost completely melted. Stir till smooth.
Freeze 1 hour until firm.
With buttered hands, shape tablespoons of mixture into balls. Roll them in whatever good stuff you have on hand to roll them in. Place each truffle in a fancy paper cup if desired.NOTE: Since this is a Valentines Recipe, you can gently press red candy hearts all around the ball OR you can gently roll out the mixture and cut into small heart shape truffles. Press a red candy heart into the centre to decorate.
Refrigerate. Makes 24 truffles.
Chunky & Cherry Fudge

1 1/2 cups sugar
2 cups miniature marshmallows
1 5 ounce can evaporated milk
1/4 cup butter
1 cup semisweet chocolate pieces
1 cup mixed nuts
1/2 cup chopped red maraschino cherries
1 teaspoon vanilla extractIn 2 quart glass measure, cook sugar, 1 cup marshmallows, milk, and butter on High for until melted ( 4 to 6 minutes), stirring once during cooking. Stir; cook for another one and a half minutes. Stir in chocolate and vanilla until smooth. Fold in nuts, cherries and remaining marshmallows. Spread in foil lined 8" by 8" baking pan. Refrigerate until firm. Cut into 24 pieces.
Oh My Brittle Heart

1 cup sugar
1/2 cup light corn syrup
1/8 teaspoon salt
1 cup peanuts
1 cup red candy hearts - the hard cinnamon ones
1 teaspoon butter
1 teaspoon vanilla extract
1 teaspoon baking sodaIn greased 2 quart glass measure, cook sugar, corn syrup, and salt on High 2 to 3 minutes until boiling. Cook 4 minutes. Stir in nuts, hearts, butter, and vanilla. Cook 2 minutes. Immediately, stir in baking soda until light and foamy. Quickly pour onto greased cookie sheet; spread. Cool; break into pieces. Makes 1 pound.
