TVP - Nutritional Information and Recipes

TVP is an acronym for Textured Vegetable Protein. It is made by hydrolyzing (water extraction process) the protein from soybeans. It is dried and generally looks like granules much like Grape Nuts Cereal, but can also be formed into large chunks or small strips. TVP has little flavour of it's own but acts like a sponge, soaking up the flavour of whatever is mixed with it. TVP was originally used as a beef substitute and filler in commercial products but is now readily available in natural food stores everywhere.
 

To make the equivalent of 1 pound of hamburger meat:  rehydrate, using 1 2/3  cups TVP plus 1 1/3 cups hot or  boiling water.  Provides you with 89 grams of protein in total.

To reconstitute the TVP, water or any juice, soup, broth etc may be used.
 

BASIC COOKED TVP

 1 cup TVP
 3/4 cup water
 1/4 cup tamari or soy sauce

Bring the water and tamari sauce to a boil.  Add TVP.  Reduce to medium and cook until all water is absorbed.
This mixture can be used in any recipe that calls for ground browned beef.    (Examples:  Lasagna, chili, spaghetti, tacos, etc., etc., etc.)
 

SHEPHERDS PIE

1/2 cup TVP
3/4 cup water
1 cup frozen corn niblets
3 sticks celery, chopped
1 onion, chopped
1 small can creamed corn
3 potatoes, cooked and mashed

Add boiling water to TVP and leave to reconstitute while you prepare the rest of the veggies. Mix the veggies and TVP together in a greased casserole dish. Microwave on high for 5 minutes, stir and cook for another 5 minutes. Cook and mash the potatoes then spread them on top.  Bake in a medium oven until potatoes are lightly browned.
 

BURGERS

1 cup TVP reconstituted with 7/8 cup boiling water
2 tablespoons your favourite BBQ Sauce
1 cup Bulgur, cooked with 2 1/4 cups water
2 tsp. vegetarian beef flavor bullion
1 small onion, minced
1 tsp. garlic salt
dash of pepper
3 eggs
1/4 cup flour

Mix everything together.  On a greased cookie sheet place about 1/4 cup  of mixture at a time and shape into patties.  Bake at 350 degrees F. for 15  minutes then flip and bake another 15 minutes on the other side.  Serve in warm hamburger buns with the all the trimmings
 

ORANGE MOCK CHICKEN CURRY

2 cups TVP chunks
2 cups water
1 large red onion, chopped
2 stalks of celery, thinly sliced
1 sweet red pepper sliced into strips
2 large carrot thinly sliced
1 tablespoon of curry powder
1 tablespoon vegetable bouillon powder
2 cloves minced garlic
1 small can pineapple chunks, drain but keep liquid
1 small can mandarin orange slices, drain but keep liquid
4 cups cooked white rice
salt and pepper to taste

In a large fry pan with a lid, heat water, liquids from the pineapple and oranges, onion, celery, carrots, peppers, spices and bouillon powder. Mix well.  When bubbly add the TVP chuncks.  Cover and simmer 15 minutes or until the TVP is soft.  Add pineapple and oranges.  Stir lightly.  Serve hot over rice.  If too liquid, mix 1 teaspoon cornstarch with a bit of water and stir into fry pan.
 
 

"MEAT" LOAF

1 cup oatmeal (coarse grind is best)
1 cup TVP
1/2 cup whole wheat flour
1/2 cup minced celery
1/3 cup minced onion
1/4 cup minced parsley or 2 generouse tablespoons dried parsley flakes
1 clove minced garlic
1 cup grated mozarella cheese
2 beaten eggs
salt and pepper to taste
1/2 c. catsup
enough water to make a slightly softer than meatloaf mixture

 Mix everything together in a bowl and let stand for 1/2 hour.  Turn mixture into a greased loaf pan and top with more ketchup.
Bake for 1 hour at 350 degrees F.  Let stand 5 minutes then slice.  Is really good cold on sandwiches.
 

MINI MEATLESS LOVES

1/2 cup catsup
2 Tbs. brown sugar
2 cups TVP reconstituted in 1 1/2 cups boiling water
1 med. onion finely chopped
1 cup rolled oats
1 cup hot and spicy tomato sauce (any tomato sauce will do fine)
2 eggs
1 tsp. savory

Preheat oven to 350 degrees.  Combine catsup and brown sugar in a small bowl, set aside. Combine remaining ingredients in large bowl and mix well Shape into 6 oblong balls and place in 9x9 pan sprayed w/ nonstick spray. Top each mini loaf with a large spoonful of the catsup mixture and bake for 1 hr.
 

"MEATBALLS"

1 1/2 cups TVP reconstituted in 1 1/2 cups hot water
1/2 cup bread crumbs
1 small onion - chopped
2 cloves garlic, minced
3 tablespoons Parmesan cheese
3 tablespoons chopped fresh parsley
2 eggs
1/4 teaspoon oregano
salt & pepper

Heat oven to 350 degrees.  Spray cookie sheet with Pam.  Mix all ingredients together well and let sit for 15 minutes. Make mixture  into balls and place on cookie sheet. Bake 30-45 minutes until browned.  Use with spaghetti and sauce or just with your favourite gravy or sauce.
 

SLOPPY JOES

1/2 cup sliced mushrooms
1 large onion, chopped
3 cloves garlic, minced
1 green bell pepper, chopped
2 cups TVP reconstituted in  1 1/2 cups hot water
1 15 oz can Italian tomato sauce
1 tsp. prepared mustard
Tabasco to taste

Brown  TVP in 2 teaspoons of margarine.  Add  mushrooms,  onions, garlic and peppers and stir fry until onion is transparent and just beginning to brown.  Add all remaining ingredients and simmer for 20 minutes or until thickened.  Serve over toasted sesame seed buns.  Top with grated cheese if desired.
 

TVP SLOPPY JOES 2

1 sweet red pepper, chopped
1 large Spanish onion, chopped
1 cup TVP, reconstituted in 1 1/2 cups hot water
1/2 cup of your favourite barbeque sauce
1 cup tomato sauce
chili powder to taste

Sauté the onions and pepper with a little bit of margarine. Add the TVP and sauce and cook  till hot, bubbly and thick.   Serve over warm, toasted buns.
 

DELUXE SLOPPY JOES

2 cloves garlic, minced
1 onion, chopped
1 green pepper, chopped
2 cups TVP reconstituted with 1 3/4 cups hot water
12 oz. tomato sauce
1 tsp. oregano
1/4 cup catsup
1/4 tsp cayenne pepper or to taste
2 tablespoons brown sugar
salt and pepper to taste
8 large kaiser rolls, split and toasted
shredded lettuce
tomato and onion slices
grated cheese

 Sauté garlic, onion, pepper, and TVP in large fry pan.  In bowl, mix  tomato sauce, oregano, catsup, cayenne,  Worcestershire sauce, and brown sugar.  Stir into fry pan and bring to a boil. Add salt and pepper to taste.  Reduce heat and stir till hot and thickened.  Toast rolls.  Spoon some sauce on the bottm of the roll. Top with lettuce, tomato, onion and grated cheese.  Cover with more sauce if desired.  Serve hot.  Feeds 8.
 
 

 LEAN LOAF

2 cups TVP reconstituted in 1 1/2 cups boiling water
1 cup milk
1 egg
1 tablespoon soy sauce
2 cloves minced garlic
1 cup bread crumbs
1/2 cup chopped onions
1/4 cup dried parsley flakes
1/4 cup grated Parmesan Cheese
1/2 teaspoon each salt and pepper
1/2 teaspoon savoring

Mix all together in a bowl.  Spray a cookie sheet with Pam.  Form mixture into two rounds and place on cookie sheet.  Brush with catsup.  Bake at 350 degrees for 1 hour brushing every 15 minutes or so with more catsup.  This is optional.  If you leave off the catsup the tops and sides get crunchier than if you brush with sauce.   You can freeze one loaf to use later.
 

CROCK POT TVP

Great recipe for people who are new to TVP or if you are cooking for someone who thinks they don't like it.

Mix in your slow coocker:
1 large onion, chopped
2 cloves minced garlic
2 1/2 cups water
1 Tbs. soy sauce
1 tsp. salt
1/2 tsp. pepper
1 small can tomato paste
1/3 cup apple juice
2 Tbs.. packed brown sugar
1 bay leaf
2 inch piece of cinnamon stick
1/4 tsp. ground cumin (optional)

Mix well then stir in 1/2 cup plain chunk TVP.  Cook on low all day and then serve over rice.  Throw away the bay leaf.
 

TVP SHEPHERDS PIE 2

1 14 oz can spiced tomatoes with juice
1/2 cup tomato juice
1 1/2 oz TVP granules
1/3 cup tomato sauce
1 cup chopped turnip
1 cup sliced leeks
1 cup sliced carrots
4 medium potatoes
splash milk and dollop of butter

1/2 cup water if necessary or more tomato juice

Turn oven on to 350 degrees F.   Wash and thinly slice the potatoes. Prepare the vegetables.  In a sauce pan bring the tomatoes, juice and TVP to a boil.  Reduce to a simmer.  Add seasonings, turnip, leeks and carrots.  Cook until the leeks are wilted and the carrots are almost tender. If too dry add the 1/2 cup of water or more tomato juice. Remove from heat and pour into a casserole dish.  Top with thinly sliced potatoes.  Dot with margarine or butter.  Bake in oven until potatoes are soft and starting to brown.  Serve hot with a side salad.
 

TVP SAUSAGE PATTIES

2 cups TVP
1 3/4 cups boiling water with 1 tablespoon of  vegetarian beef flavoured bouillon
1 tsp. garlic salt
1 1/2 tsp. paprika
2 eggs, beaten
1 cup bread crumbs

Mix the TVP into the hot water. Let stand for a few minutes. Add everything else and form into four patties. Fry in non-stick pan. These can be frozen then whipped out to be served as a sausage pattie with your eggs or as a burger.
 

 TVP LOAF

 1-1/2 cup  TVP reconstituted in 1 1/2 cups hot water
 1 large chopped onion
 2 medium carrots, grated
 1 cup sliced mushrooms
 2/3 cup rolled oats
 2 cups cooked white or red kidney beans
 2 eggs
 1 cup tomato sauce
 1 clove minced garlic
 salt and pepper to taste
 BBQ sauce to brush on the top

 Let the TVP sit in the water till it is all soaked up. Add all the rest of the ingredients.  Pack into a greased loaf pan.  Brush the top with the BBQ sauce.  Bake at 350 degrees F. for one hour or until a knife comes out clean.  Excellent sliced on sandwiches the next day.
 

STEAMED TVP DUMPLINGS

1/2 cup TVP
1/4 cup water
1/2 teaspoon grated fresh ginger
1 clove garlic, minced
2 teaspoon soy sauce
2 tablespoon scallions, minced
4 tablespoons mushrooms, minced
1/4 teaspoon cayenne
salt and pepper to taste
won ton wrappers

Mix the TVP and water to reconstitute.  Add the rest of the ingredients and mix well.  Fill each wanton wrapper with about 1 rounded tsp. of the  mix, using water to seal the edges.  Steam for about 5 minutes in a metal steamer that you have sprayed with PAM.  Makes about 20 dumplings.  Use your favourite dipping sauce and eat  as is or add to soup or stews for added "oomph".
 

SUPER TVP

2 large onions, coarsely chopped.
1 small green pepper, coarsely chopped
garlic, minced {lots}
1 cup cooked kidney beans
1/2 cup TVP
1/2 cup frozen corn kernels
1 cup diced, seasoned tomatoes (Del Monte)
1/2 cup tomato juice
1/4 cup rice
2-3 teaspoons vegetable stock
1 tbs. parsley
1/2 teaspoon chili powder
salt and pepper to taste

Sauté the onions, pepper & garlic in a little oil or margarine. Add the rest of the ingredients and simmer for until the liquid is almost all gone.  Remove from heat, cover and let stand 5 minutes.  Serve with a side salad.
 

FRUIT CRISP WITH TVP

3 cups apples, peeled and sliced
1/4 cup apple juice
1/2 cup TVP
1/4 cup brown sugar, packed
1/4 cup rolled oats
1/2 teaspoon cinnamon
1/2 cup pecans or walnuts, chopped
1 Tablespoon canola oil

Heat oven to 350 degrees. Spray rectangular pan, 9x9x2 inches, with cooking spray.  Spread apples evenly in pan, sprinkle with the apple juice and nutmeg.  Mix rolled oats, brown sugar, nuts TVP and cinnamon and crumble onto the apples. Drizzle with canola oil.  Bake about 30 minutes until brown and bubbly.
