Rum Truffles

1/2 lb plain chocolate
6 tsps rum
4 tsp cream 
chocolate vermicelli

Melt the chocolate in the top of a double boiler or in the microwave.  Stir in the rum and cream.  Blend well.  Remove from the heat, or the microwave.  When it is cool enought to hold a shape, roll the mix into bite-sized balls then roll each ball i the chocolate vermicelli.  Cool and enjoy.

Rum Balls

2 tablespoons cocoa
1 cup confectioner's sugar
2 1/2 Cups finely crushed vanilla wafers 
1 cup finely chopped pecans
3 tablespoons light corn syrup
1/4 cup rum or bourbon
more confectioner's sugar

In a large bowl sift together the cocoa and sugar.  Add the other ingredients and mix well.  Form into 1 inch balls with your hands.  Put some more sugar on a plate and roll each of the balls in it.  Cool.  Makes about 36
