| Nin-Nin's Never Fail Cherry Pound
Cake
1 cup soft butter or margarine
2 3/4 cups sugar
6 eggs
1 cup sour cream
3 cups flour
1 cup coarsley chopped maraschino cherries
1/2 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon almond extract
1 teaspoon vanilla extract
Preheat oven to 350 degrees. Grease and flour a loaf pan.
Cream butter and sugar until fluffy. Add the eggs, one at a time and
beat well. Add the sour cream, then the flour, salt, baking powder and
extracts, beating well with each addition. Fold in the cherries and
mix till evenly distributed. Bake for 1 hour and 20 minutes
but start checking to see if it's done at the one hour mark by sticking
a toothpick into the centre. It should come out clean.
