OAT BRAN APPLE MUFFIN
Yield:  12 - 14 muffins

2 cups oat bran
1/2 cup whole wheat pastry flour
1 tbsp. baking powder
1/4 cup pure honey
6 1/2 oz. silken tofu
3/4 cup rice or soy milk
1 cup diced apple

Preheat oven to 425 degrees.  Place muffin liners in muffin tins.  Combine oat bran, flour, baking powder in a large bowl.  Place honey, tofu, and rice/soy milk in a blender or food processor until smooth.  Pour mixture into dry ingredients and stir only enough to combine.  Stir in apples.  Fill muffin tins about 2/3 full.  Bake about 17 - 20 minutes, until lightly golden.  Remove from oven and tins, cool on a rack.
