4 cups all-purpose
flour
3 cups quick oats
2 cups brown sugar,
packed
1 cup wheat bran
3 1/2 tablespoons
of baking powder
3 cups green seedless
grapes cut into halves
2 cups carrots,
grated
2 diced apples with
skins on
2 1/2 cups
milk
3/4 cup vegetable
oil
4 eggs, beaten
1 cup salted peanuts,
chopped
1 cup salted peanuts,
halved - for the tops of the muffins
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ginger
Preheat your oven to 350 degrees F. Line the muffin tines with paper liners.
Mix all the dry ingredients together in a big bowl.. Mix well. Add all the rest of the ingredients except the peanuts for the tops. Stir just enough to mix. Don't overmix. Spoon into prepared muffin tins. Sprinkly with the peanut halves. Bake for 20 to 25 minutes. Store in an airtight container or in the freezer.
