| Corn Muffins
1 cup yellow cornmeal Combine the first 6 ingredients in a medium sized bowl. Make a well in the center of the mixture. Combine the buttermilk, oil and egg whites. Add this to the cornmeal mixture, stirring just until dry ingredients are moistened. Do not over mix. Spoon batter into muffin pans coated with cooking spray, filling three fourths full. Bake at 425º for 12 to 14 minutes or until golden. Remove from pans immediately. Makes 15 muffins.
