SUPER EASY CUPCAKES
3 cups Bisquick baking mix
1 cup sugar
1 cup cold milk (or water)
1/4 cup shortening
2 teaspoons vanilla
2 eggs
Preheat oven to 375 degrees F.
Grease and flour medium muffin cups or line with paper baking cups.
Beat all ingredients together on low speed, about 30 seconds, scraping
bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally.
Fill muffin cups ½ full. Bake about 15 minutes or until done. Immediately
remove from pan; cool. Frost if desired. Makes about 26 cupcakes.
