SOUTHWEST TOFU CASSEROLE
2 cups diced extra firm tofu
1 medium onion, chopped (about ½ cup)
1 can (4 ounces) chopped green chilies, drained
1 cup shredded Cheddar cheese (4 ounces)
1 cup sour cream
1 can (12 ounces) Mexican-style corn drained
2 cups Bisquick Original baking mix
1 ½ cups milk
1 teaspoon chili powder
2 eggs
HEAT oven to 350 degrees. Grease rectangular pan, 13x9x2 inches. Layer
tofu, onion, chilies, cheese, sour cream and corn in pan. MIX remaining
ingredients until smooth. Pour over corn. BAKE about 35 minutes or until
knife inserted in centre comes out clean, Cool 5 minutes before cutting.
