IMPOSSIBLE TURKEY PIE
2 cups extra firm, herbed, tofu diced into 1/2" squares
1 cup sliced mushrooms
½ cup sliced green onions
½ teaspoon salt
1 cup shredded natural Swiss cheese
1 ½ cups milk
3/4 cup Bisquick baking mix
3 eggs
Press tofu between paper towels to remove as much moisture as possible.
Dice into 1/2 " squares. Heat oven to 400 degrees. Grease pie plate, 10
x 1 ½ inches. Sprinkle tofu, mushrooms, onions, salt and cheese
in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender
on high or 1 minute with hand beater. Pour into plate. Bake until knife
inserted between centre and edge comes out clean, 30 to 35 minutes. Cool
5 minutes before serving. 6 to 8 servings.
