IMPOSSIBLE CHEESECAKE

3/4 cup sugar
½ cup Bisquick baking mix
2 eggs
2 packages (8 oz) cream cheese, cubed and softened
2 teaspoon vanilla
½ teaspoon grated lemon peel

Heat oven to 350 degrees. Grease 9" pie plate. Place all ingredients in blender container. Blend on high speed, stopping blender occasionally to stir, until smooth, about 3 minutes. (Or beat in large bowl on high speed of electric mixer for 2 minutes.) Bake until puffed and centre is dry, about 30 minutes. DO NOT OVER BAKE. Now spread with the following topping and refrigerate until chilled, at least three hours. Serve plain or with choice of fruit.

TOPPING:
Mix one cup sour cream, 2 tablespoons sugar and 2 teaspoon vanilla and spread carefully over top of baked pie. Chill as directed above.
