IMPOSSIBLE BACON PIE
12 slices vegetarian bacon, crisply fried and crumbled
1 cup shredded natural Swiss cheese (about 4 oz)
1/3 cup chopped onion
2 cups milk
1 cup Bisquick
4 eggs
1/4 teaspoon salt
1/8 teaspoon pepper
Heat oven to 400 degrees. Lightly grease pie plate, 10x1-1/2". Sprinkle
bacon, cheese and onion in pie plate. Beat remaining ingredients until
smooth, 15 seconds in blender on high speed or 1 minute with hand beater.
Pour into pie plate. Bake until golden brown and knife inserted halfway
between centre and edges comes out clean, 35 to 40 minutes. Let stand 5
minutes before cutting. Refrigerate any remaining pie. 6 servings.
