HUNTER’S HASH PIE
1 cup TVP granules
1 cup boiling water plus 1 tablespoon soy sauce
1 small onion
1 cup hash browns, frozen
1 medium green bell pepper, diced
1 medium tomato, chopped
1 cup milk
1 cup Bisquick baking mix
2 eggs
3/4 teaspoon salt
1 teaspoon dried basil
Preheat oven to 400 degrees F. Grease a 9-inch pie plate or round 9-inch
cake pan.
Put TVP and water in a small bowl with soy sauce. Let sit for
15 minutes with a cover on. Drain. Cook TVP, onion and hash
browns in 10-inch skillet with a bit of butter or oil. Stir frequently
until TVP is a darker brown. Drain. Spread in pie plate. Sprinkle bell
pepper and tomato over beef mixture. Beat remaining ingredients 15 seconds
in blender or 1 minute with whisk until smooth. Pour over ground beef mixture.
Bake about 35 seconds or until knife inserted in centre comes out clean.
Cool 10 minutes and serve with spaghetti sauce, if desired.
