HEARTY BREAKFAST MUFFINS
1/4 cup milk
2 tablespoons vegetable oil
1 large egg
1 ½ cups Bisquick
1/4 cup rolled oats
1/4 cup sugar
1/4 cup brown sugar, packed
½ teaspoon cinnamon
1/4 cup carrot, pared and shredded
½ cup apple, pared and shredded
1/4 cup raisins
2 tablespoons walnuts, chopped
Preheat oven to 400 degrees F.
Line 12 baking cups with paper baking cups. Spray bottoms of baking
cups with a little nonstick cooking spray. Beat milk, oil and egg slightly
in medium bowl. Stir in remaining ingredients until just moistened. Fill
muffin cups ½ full. Bake 20 minutes or until golden brown. Makes
about 12 muffins.
